Is there anything more hearty than a good dollop of mash potato? Little Bear's first taste was of potato and he has loved potato based flavours, so tonight I introduced him to my root veggie mash and he really seemed to enjoy it. The great thing was it doubled up as a tasty side for our meal tonight too – win win! Tonight I added some kale into the mix as it is full of iron and calcium which will help with little Bear's development and hopefully encourage him to eat his greens. It is also great if you are looking for a diary-free mash recipe.
To make five baby portions or one baby portion and two adult portions, you will need:
200g potato, diced
100g carrot, diced
100g parsnip, diced
40g kale, chopped
1 tbsp mixed herbs
350ml weak chicken stock
2 tbsp vegetable oil
Start by heating the vegetable oil in a saucepan over a medium heat. Add the diced potato, carrot and parsnip and sauté for about 3 minutes. Then pour over the weak stock (I use a quarter of a reduced salt chicken stock cube) and stir in the mixed herbs, cover and bring to the boil. Once the mixture is boiling reduce to a simmer for 15 minutes.
After 15 minutes add the kale to the mix and allow the mixture to continue to simmer for 5 more minutes.
Remove from the heat and mash to your preferred consistency and enjoy!
This oh so scrummy root veg mash freezes well – that is if you don't want to have it with your own main meals!
