Cheesy Tomato Muffins

Little Bear loves his muffins – the texture is nice and soft making it easy for him to eat considering he still doesn’t have any teeth. However, one cannot live off sweet things alone, so here is a savoury muffin recipe which is ideal for weaning. These muffins make a tasty lunch for little eaters or a great afternoon snack for older ones. They are full of cheese which is a fantastic source of calcium especially if you are starting to reduce milk feeds these delicious muffins an excellent choice.

Little Bear and his Christmas Day baby friend adore these – demolishing them in absolutely no time at all!

To make 12 Cheesy Tomato Muffins you will need:

225g self-raising flour, sieved
1tsp baking powder
1 1/2 tbsp chives, finely chopped
4 spring onions, chopped
70g  Cheddar cheese, grated
40g Parmesan cheese, grated
30g feta cheese, crumbled
1 egg
200ml buttermilk
75ml sunflower oil
a handful (8-10) of baby plum tomatoes, chopped

Firstly, preheat your oven to 160°C and prepare a 12 hole muffin tray with paper cases.

Place your dry ingredients (flour, baking powder, chives, spring onions, and cheeses) into a large bowl. In a jug mix together the eggs, buttermilk and sunflower oil and then add to them to the dry ingredients. Mix them all together gently until they are combined. Once combined stir in about three quarters of the chopped tomatoes, reserving the rest for garnishing later.

Split the mixture evenly between the paper cases and then top the mixture with the chopped tomatoes.

Put them in the oven to bake for 28-30 minutes until the muffins are lightly golden.

Once baked, remove from the oven and allow to cool on a wire rack before enjoying with your little eater.

These savoury muffins will keep for two days in an airtight container, but they also freeze well for up to a month if you want to save some for later – that’s if they last that long!
